I have worked in baking and pastry for 25 years. The first 10 years were spent in the pastry world at hotels, restaurants, and casinos. Since 2011 I have worked full time in bread baking. I spent 11 years running research and development at Chabaso Bakery in New Haven, CT. In 2022 I moved to New Jersey and have been working as a Bakery Specialist for Lesaffre. I spend most of my time working with our customers on their development projects with our ingredients.
